Clean, tasty grab and go bars can be hard to come by. Quite often I find myself in need of a quick snack, and wish I had something to take to-go. Here are three delicious raw bars to solve that predicament. They are a spin off the classic Lara Bars, and are a travel staple with my friends and family. With three to four ingredients each and the help of a Vitamix or blender, you'll be all set to create these nutrient dense, delicious snacks. Enjoy!!

Raw Energy Bars, 3 Ways


Cacao Date Walnut


(makes 6-8 bars)

1 cup walnuts

1 cup date paste (or 16 medjool dates, pitted)

2 tablespoons cacao

Blend all ingredients together in Vitamix or food processor. Pour onto parchment and shape into rectangle. Refrigerate for about 20 minutes, then cut into squares. Keep bars in refrigerator for up to 4 weeks.


 Apple Pie Bars


(makes 6-8 bars)

 1/2 cup applesauce

1 cup almonds

1 cup walnuts

1/2 pound date paste (or 8 medjool dates, pitted)*

1 tablespoon cinnamon

Blend all ingredients together in Vitamix or food processor. Pour onto parchment and shape into rectangle. Refrigerate for about 20 minutes then cut into squares. Keep bars in refrigerator for up to 4 weeks.

*This recipe also works quite nicely with 8 dried figs


Pecan Pie Bars


(makes 6-8 bars)

 1 cup almonds

1 cup pecans

1/2 pound date paste (or 8 medjool dates, pitted)

Blend all ingredients together in Vitamix or food processor. Pour onto parchment and shape into rectangle.  Refrigerate for about 20 minutes then cut into squares. Keep bars in refrigerator for up to 4 weeks.
