MATCHA SANDWICH COOKIES

This week is extra special! I partnered up with the You Tube star, Olivia Ku of Love Health OK.  She is amazing! Her channel is full of amazing healthy recipes. Olivia and I had a blast making this video of my special recipe for Matcha Cookies! Check out the video here and bake these delightful little cookies. You will be so happy you did!

Matcha Cookies

For 2 dozen sandwich cookies

2 cups almond flour

1/4 cup melted coconut oil

1/4 cup 100% maple syrup

1/8 teaspoon Himalayan pink salt

1 teaspoon matcha (This is the matcha brand I love to use)

Preheat oven to 350. In a large bowl, stir together the almond flour and salt. Add the coconut oil and maple syrup.  Stir until a soft dough is formed. Add matcha and stir.

Cut two pieces of parchment paper into 8 x 8 squares. Place dough between parchment paper and roll dough out with a rolling pen. Your dough should be about an 1/8 of an inch thick.  Place dough in the refrigerator for about 10 minutes.

Cut dough into circles using a circular cookie cutter about 2-3 inches wide. Alternatively, you can use the back of a jar to shape the cookies. Place cookies on a cookie sheet and bake for about 7-8 minutes. Remove the cookies from the pan and allow to cool. Prepare frosting.

To Prepare Frosting:

1/4 cup coconut butter

2 teaspoons 100% maple syrup or honey

1/2 teaspoon lemon juice

1/4 teaspoon vanilla

1/4 cup coconut milk

1 teaspoon matcha

Mix all ingredients except matcha over very low heat.  Color with matcha.  Allow to cool

To sandwich cookies:

Spread matcha icing evenly on top of a cookie, and top with another cookie. Repeat until all cookies are lovely matcha sandwiches!
